Gluten-Free Pumpkin Bagel With Vegan Salmon Lox
2 Tsp Tamari or Gluten Free Soy Sauce
1 Tsp Sea Salt
¾ Cup Hot Water
1 Tsp Nori Granules
3 Tbsp Caper Brine
2 Tbsp Rice Vinegar
1 Tsp Garlic Powder
¼ Cup Olive Oil
4 The Greater Knead Pumpkin Bagels
Vegan salmon lox
½ - 1 cup cream cheese
1 cup cucumber slices
¼ cup pickled onion slices
4 tbsp capers (optional)
Vegan Lox (Salmon)
Use a vegetable peeler or mandolin to slice the carrot into ribbons. Place the carrot ribbons in a steamer basket and steam for 10 minutes. Set aside.
Mix the rest of the ingredients for the faux salmon lox and add to the carrots when they are still a little warm. Transfer to airtight container and refrigerate at least a couple hours but overnight is better.
Assemble the bagel sandwich – Microwave The Greater Knead bagels for approximately 60 seconds or until soft. Afterwards, toast the bagels as desired.
Spread a generous amount of cream cheese on both halves of the bagels. Layer with cucumber slices, vegan salmon lox, pickled onion slices and capers (if using). Enjoy!
