Ingredients

4 The Greater Knead Bagels, cubed (any savory flavor works)

8 eggs

2 cups milk (regular or dairy free)

1 tsp salt

1 lbs ground breakfast sausage

1/4 tsp pepper

1 onion, diced

1 cup chopped bell peppers

2 cups shredded cheese (regular or dairy free)
Directions
Preheat the oven to 350 degrees F.
Whisk together the eggs, milk, salt and pepper. Add the cubed bagels and let them sit to soak up the mixture.
Cook your sausage halfway and then add the onion and bell pepper. Cook until the veggies are tender. Turn off the heat, set aside.
Combine the soaked bagel pieces and meat/veggie mixture.
Pour half into a greased 13x9 baking dish and add some cheese. Pour the remaining mixture on top and then add more cheese on top.Bake covered for 20 minutes. Uncover and bake for an addition 35-40 minutes, or until it’s golden on top and a butter knife comes out of the middle clean. Serve warm!
